With 'Overextended Legs' the AT-ST will ignore all, choosing directly one target on the board for his fire (I interpret it like as the AT-ST is at high level from the ground and it can fire from above to targets).

I simply count the spaces, counting the space the target is but not counting the space the AT-ST is (and not counting diagonals). 'Rain of Fire' does not need orthogonal/diagonal alignment. I modified the text, so maybe now is clearer.
